Master Chef Kawakubo has operated Umenoki at Entsuji Street in Akasaka offering the most traditional Edo Mae Sushi (Tokyo Style) for the past 35 years.

Unlike other more modern Sushi restaurant where Fatty Tuna (Ootro) is featured as a main item, Umenoki offers many other fish and shellfish prepared in a traditional ways. Ni Anago, Tako no amani, Kobujime, Sujime are ways and techniques used to bring out the best tastings.
